Ophthalmic natamycin is the same compound now sprayed onto your cheese to prevent mould. In 2014, Kraft swapped out sorbic acid for natamycin — then relabelled the packaging as “no artificial preservatives.” They didn’t remove the preservative. They replaced it with an antifungal medication and rebranded it as natural. Whole Foods has banned natamycin from every product in its stores since 2003. Whole Foods’ global cheese buyer explained their position: “We just feel that we want cheese in its natural state.” A block of cheese needs milk, cultures, salt, and enzymes. Kraft’s shredded version adds modified cornstarch, calcium sulfate, annatto colouring, and an antifungal eye medication — to turn a block into a bag. The Fat Free version goes further — adding titanium dioxide, a whitening agent banned from food across the entire EU since 2022 over DNA damage concerns. Buy the block. Shred it yourself.
