Creamy chicken cheese flatbread Ingredients For the dough: 2 1/2 cup all purpose flour 1 1/2 cup greek yogurt 2 tbsp clarified butter or butter 1/2 tsp salt 1 tsp baking powder 1 tbsp olive oil For the chicken filling 1 lb boneless chicken breast, boiled in salt water and shredded 1 cup mixed bell pepper, finely chopped 1/2 yellow onion, chopped 4 cloves fresh garlic, minced 1/3 cup green onion, finely chopped 1 tbsp all purpose flour 1/2 cup whole milk 1/3 cup cream cheese Salt to taste 1 tsp black pepper 1 tbsp garlic powder 1 tsp smoked paprika powder 1 tsp red chili flakes 1 tsp cumin seeds 1 tsp onion powder 2 tbsp clarified butter/ oil For the garlic butter glaze. 1/3 cup butter, melted 1 tsp finely minced garlic 1 tbsp parsley, finely chopped To assemble: 2 cups mozzarella cheese, freshly grated Method: In a mixing bowl, combine all-purpose flour, baking powder, and salt. Mix them thoroughly. Add the Greek yogurt and clarified butter, mix by hand until the dough begins to come together, knead until a rough dough ball forms. Drizzle olive oil on top. Cover the dough and let it rest for 30 minutes . After resting, knead the dough for about 4-5 minutes until it becomes smooth. Prepare the chicken filling. In a pan, heat clarified butter, chopped garlic, and onions. Sauté for 1 to 2 minutes until the onions become translucent. Then, add the bell peppers and green onions. Sauté for 2 to 3 minutes until the vegetables are soft. Finally, add the shredded chicken along with the seasonings: salt, pepper, paprika powder, garlic powder, onion powder, cumin seeds, and red chili flakes. Mix everything together. Add the all purpose flour & toast it for a min. Pour in the milk and cook until the mixture thickens. Add cream cheese and lower the heat. Continue cooking until the mixture thickens and becomes creamy, Make nine mini balls out of the dough and flatten them with a rolling pin. In half of the rolled dough, add the cooled chicken stuffing along with mozzarella cheese. Close the dough with the other half and cook on both sides for 8 minutes, flipping halfway through.
