🌮 Tacos Ahogados de Papa Cheesy Potato Tacos with Homemade Chile de Árbol Salsa 🥔 Ingredients For the Potato Filling * Potatoes, peeled and cut into cubes * Mozzarella cheese, a handful or to taste * Paprika, to taste * Black pepper, to taste * Sea salt, to taste * Garlic powder, to taste * Corn tortillas * Oil, for frying For the Homemade Salsa * 5 Roma tomatoes * 3 garlic cloves * ¼ of an onion * 3–4 chiles de árbol * A little dried oregano, to taste * Black pepper, to taste * Salt, to taste * A little of the reserved boiling water, as needed For the Toppings * Shredded lettuce * Sour cream * Thinly sliced purple (red) onion * Crumbled Cotija cheese 👩🏻‍🍳 Instructions Step 1: Prepare the Potato Filling 1. Peel the potatoes and cut them into cubes. 2. Place the potatoes in a pot of water and boil until fork-tender. 3. Remove the potatoes from the heat and drain the water. 4. Mash the potatoes until smooth. 5. Add a handful of mozzarella cheese, or as much as you like. 6. Season with paprika, black pepper, sea salt, and garlic powder to taste. 7. Mix everything together until well combined. Set aside. Step 2: Assemble the Tacos 1. Warm the corn tortillas in the microwave for a few seconds until soft and pliable. This makes them easier to fold without breaking. 2. Place some of the cheesy potato filling in the center of each tortilla. 3. Fold the tortillas closed to form tacos. Step 3: Fry the Tacos 1. Heat oil in a skillet over medium heat. 2. Carefully place the filled tortillas into the hot oil. 3. Fry until lightly golden brown and crispy, turning as needed. 4. Remove the tacos and place them on a paper towel-lined plate to drain any excess oil. Step 4: Make the Chile de Árbol Salsa 1. Place the Roma tomatoes, garlic cloves, onion, and 3–4 chiles de árbol in a pot of water. 2. Bring to a boil and cook just until the tomatoes soften and the ingredients are tender. Avoid boiling them for too long. 3. Remove the ingredients from the heat and reserve a little of the cooking water. 4. Transfer the cooked ingredients to a blender. 5. Add a small splash of the reserved cooking water to help the ingredients blend smoothly. 6. Add oregano, black pepper, and salt to taste. 7. Blend until the salsa is smooth. Add a little more cooking water if needed to reach your desired consistency. 8. Set the salsa aside. Step 5: Assemble Your Tacos Ahogados 1. Arrange the crispy potato tacos on a plate. 2. Spoon the homemade chile de árbol salsa over the tacos. 3. Top with shredded lettuce, sour cream, sliced purple onion, and crumbled Cotija cheese. 4. Serve immediately and enjoy! ¡Buen provecho! ❤️🌮 Tip: Start with 3 chiles de árbol for a milder salsa, or use 4 if you prefer more heat. Add the salsa right before serving to keep the tacos from getting soggy too quickly.
