Firmly pinch and seal the edges so the cheese stays inside during cooking. 5. Brush the outside lightly with olive oil. 6. Heat a cast-iron skillet or grill over medium-high heat. 7. Cook the burgers for about 5–6 minutes on the first side. Flip and cook another 4–6 minutes, until the center reaches 160°F (71°C) for ground beef. Avoid pressing down on the burgers—you don't want that blue cheese filling escaping! 8. Let the burgers rest for about 5 minutes. 🥒 Make the Sauce Mix the Greek yogurt, lemon juice, olive oil, parsley, dill, garlic powder and black pepper until creamy. 🍔 Assemble Spread the yogurt sauce on the bottom bun.
