and if we don’t finish, there will always be more for tomorrow😋 (for 1 portion) you’ll need: - 3 fresh eggs - 1/4 of a red onion, finely chopped - 1.5tbsp mayonnaise - 1 heaped tsp dijon mustard - a pinch of sea salt & pepper (plus extra to serve) - toasted / fresh sourdough - fresh cucumber method: 1. begin by placing the eggs in a small small saucepan and fill with cold water. 2. place on a high heat until boiling. once the water is boiling, lower the heat slightly and simmer for 8 minutes. 3. meanwhile, finely chop the red onion (i usually chop the whole onion and place the rest in a bowl for another time!). 4. once the eggs have boiled, drain the hot water and fill the saucepan up with ice cold water. leave to sit for a couple minutes. 5. now carefully peel the shell off the eggs and place into a medium sized bowl. 6. using a fork, mash the eggs into roughly small pieces (it doesn’t need to be super fine!). 7. add in the red onion, mayonnaise, dijon mustard and salt & pepper and mix thoroughly (mashing as you go). 8. now grab your slice of bread (toasted or fresh!) and top with the egg mix. 9. place a few slices of fresh cucumber on top and finish with a pinch is sea salt & pepper! enjoy xxx🥚🥒 #EasyRecipes #egg #toast #lunchideas #eggsandwich
