I so feel this. I am doing hungryroot right now to look after my health - my husband will eat a few of the meals here and there but I also do a small grocery trip for weekly staples and easy oven ready things for him, snacks for the kids etc. I’m still doing a crockpot meal once a week for him bc that’s all I have energy for right now!!

I have spent so much of the past 10 years as a single parent working multiple jobs. And I also would do the convenience foods. But when I had time, one thing that was helpful and quick was to meal prep a bunch of chicken and ground beef on Sundays so that I could easily make dishes with them during the week. Another option is the crockpot! Something about putting the food in in the morning and having it done is just easier. I would get a couple of pork tenderloins put some barbecue sauce on them and put them in the crockpot. Then you have the protein for tacos or sandwiches or something with pasta or just add a couple vegetables on the side. Hope this helps!

One more thing— more easy meal ideas: quesadillas (you can do black bean, meat, chicken or combination of three. ) and chicken in crockpot with a jar a tikka masala is delicious! You can add carrots and potatoes or just to buy any vegetable you like. AND…. Whenever you make soup or chili make extra and freeze it for future dinners! Always good with a grilled cheese.
