on today’s menu of new breakfasts for grandpa…we have a twist on a classic🥕🍯 you’ll need: - 1 medium carrot, peeled and grated - 2 heaped tbsp cottage cheese / whipped soft cheese - 1tbsp honey - 1 egg - 1/2 tsp cinnamon - 3 heaped tbsp plain flour - 1tsp baking powder - knob of butter for frying - a handful of sultanas (optional) (to serve): - greek yogurt - a few walnuts, chopped - a dash of cinnamon - a drizzle of honey / maple syrup method: 1. begin by placing the grated carrots, cheese, honey, cinnamon, egg, flour and baking powder in a medium sized bowl and mix thoroughly. 2. place a frying pan on a medium heat and melt the butter. 3. spoon about 2tbsp of pancake batter per pancake onto the pan in circular rounds (about 8cm in diameter). 4. then, pop a few sultanas on each pancake before you flip them (optional). 5. after a few minutes, check if they are golden brown and flip carefully. 6. cook for another couple minutes and then remove from the pan. 7. repeat with the rest of the mixture (i managed to get 4 pancakes out of this!). 8. serve in a stack whilst warm and top with a generous dollop of greek yogurt. 9. sprinkle over a handful of chopped walnuts and a dash of cinnamon. 10. and don’t forget a nice drizzle of honey / maple syrup to finish… enjoy!🥕🍯 #breakfast #carrotcake #carrot #pancakes #yogurt
