@helentaylorrr: me making myself at home🤣(this felt perfect for the first day of autumn, it’s like summer and autumn combined)🍋 (for the lemony custard oats): - 1/2 cup (40g) rolled oats - zest of 1 lemon - 1 egg - 1tbsp honey / maple syrup - 1 cup (240ml) milk (for the lemon & blueberry chia jam): - 1 cup (a large handful) of fresh / frozen blueberries - juice of 1/2 a lemon - 1tbsp honey - 1tbsp chia seeds (to serve): - chopped nuts (of your choice) - full fat greek yogurt method: 1. begin by placing the blueberries, chia seeds and honey in a small bowl and microwaving in high for 1-2 minutes, stirring in between. (alternatively, heat on the hob in a saucepan until you form a jam!). 2. remove from the microwave, stirring and leave to one side to soak. 3. meanwhile, place the oats, lemon zest, egg, honey and milk in a small saucepan and place on a medium heat. 4. whisk very thoroughly until the mixture has warmed up enough and you start to see some steam. 5. lower the heat to its lowest and continue whisking continuously for about 5-10 minutes or until the mixture is creamy and thick enough (for your preference!). 6. it’s important you continue whisking and keep the heat low otherwise the egg will scramble and we don’t want this! 7. once creamy and thick, remove from the heat and serve in a bowl. 8. top with the blueberry jam, a dollop of yogurt and a sprinkle of nuts… enjoy!🫐🫐🫐 #oatmeal #yogurt #EasyRecipes #lemon #breakfast
