Chefs should also NOT be opening restaurants unless they know about the front of house operations…they usually don’t, which is why most restaurants run like crap

I've wanted to open my own bar for a long time. So I started cutting my teeth by starting from the bottom as a barback and working my way through each position since. I've now been part of opening a new speakeasy that I helped make the menu. Gave me a lot of insight and additional notes for when I'm ready to start mine

People don't truly realize the amount of work that goes into running a restaurant. Just letting you know that your P&Ls that you should do every month alongside with inventory. That alone is enough to make your head spin.

Unless you're willing to LIVE THERE it ain't for you. Even after it has turned a profit (probably 5 years for a first timer, unless you got really lucky with investors and teams) you really oughta be there. Time and again I've seen the best employees get comfortable, then a few drinks on shift or boxes of food taken home turns into under-ringing and pocketing the difference, undisclosed comping or discounting cash tickets, to flat out unveiled theft. Google will tell you that the average take home for a restaurant owner/operator can be 9%, but I'd bet my life it's functionally not even close. Like when a bartender says they make $1,000 a night when in reality that only happens to them 5 times a year, and from personal experience, I'd have gladly made half of that if it meant those nights were half as hellish!

You can either be first (unique style in an area that is missing that style) or the best you can’t be mid at either. Even with that you gotta be able to sell drinks accept the food as barely making even or losing money but the drinks have to be carrying heavy.

I've been in restaurants for over ten years. don't do it unless you know what you're doing. if you have never worked in a restaurant for even a year, forget about it. until you get experience as first a server, then bartender, cook, then manager, then you can talk. as someone who has done every position in a restaurant including management, I still don't feel i have the skills needed to open my own restaurant

I have owned my place for almost 7 years. my parents built out 3 stores. I have served, bartended, managed, etc. I am the head chef, second generation. I grew up around commercial equipment. This life kinda sucks. Do I love it yes. But this life blows.

Right out of college I thought opening a restaurant would be fun. Figured get experience first and got a job as a line cook. Didnt last 3 months. Hated every second but I’m glad I did it. Definitely didn’t want to work in a restaurant after that and I appreciate going out to eat so much more.
