@eatbasilandbloom: Maintaining a tiny sourdough starter genuinely revolutionized my sourdough baking years ago when I chose to stop refrigerating my sourdough starter. The biggest questions I'm asked when I recommend it are "how much should I keep?" and "but what if I want to bake a lot of bread?". It's definitely not intuitive and goes against the current status quo of keeping enough starter on hand at all times to bake whenever you want. We created this graphic to answer those two questions along with giving examples of how easy it is to not only maintain a small amount of starter with daily refreshments, but to also show that it's not that complicated to bulk your starter from 45g to many kilograms in just a few feedings. I hope that this is helpful as you transition from a large starter to a tiny one!
I may be wrong, but I think you have some numbers transposed for the stiff starters on the first slide.

I have a question! How do you prep for a two day back to back event with around 3,000 attendees!! And one regular kitchen oven?

I accidentally figured my ratios wrong and ended up with 1:6:4 will this be ok? My starter is about 3 months old and it’s bubbly but barely doubles much. 78° and was going to try a stiffer starter. Any suggestions? Thank you!

Thank you so much for doing this and sharing! I've loved doing sourdough, but the math aspect just takes me right out of it and makes my head hurt sometimes. 😅
I'm down in Malad and I've really been enjoying your content. The recipes I've tried from you have been fantastic!

While I still keep Edna Mode in the fridge, finding your account and normalizing keeping 50-60g instead of more was so mind blowing to me but has honestly made me enjoy keeping her and love growing her to bake with! Love your account!

Random question. I am downgrading how much starter I keep after watching some your videos. I normally do 25 grams start then 50 water 50 flour. I did 1 gram starter and 10 flour 10 water. When I’m ready to use this I just put some starter in another jar and feed it to keep that small amount small? If that makes sense. I’m sorry if it doesn’t.

I bought your starter. Can you recommend a good feeding ratio ? I’m struggling a bit with the stiff starter feed, it appears dry and sticky. It seems like it needs to be a bit more hydrated. Thank you !

I’ve gotten lazy and don’t measure my water or flours anymore when feeding I just do it by feel. Is that bad?
