This is what I cooked for dinner last week as a semi-self-sufficient smallholder in early autumn. At the weekend we had chicken and chips with a home reared chicken, chips, a load of veg from the garden and a fennel, lettuce and apple salad with honey dressing. We also made a mayonnaise with our hen eggs. Everything in this meal was from the smallholding except for the oil, salt and vinegar. We had leftover chicken so I decided to make a Thai green curry. We grow most of the ingredients for a Thai green curry paste including lemongrass, Thai basil, coriander, keffir lime leaves, garlic and shallots. I added aubergines, green beans, a courgette and some chard. I used the chicken bones to make stock which I used in a soup the next day. I found a nice cabbage, & gave the outer leaves to the pigs. Shallots, carrots and tomatoes also went into the soup along with my roasted celery puree from last year.  We have a glut of beetroot so I made a roasted beetroot houmous, and with that we had some other picky bits like a coleslaw with the half of the cabbage from the soup, some red cabbage leaves, fennel and apple. A mackerel pâté with herbs from the garden, sourdough flatbreads and pickled jalapeños. I spotted a nice looking cauliflower so decided to make a macaroni and cauliflower cheese.
