Ingredients: - 1 ½ cups all-purpose flour - 1 cup greek yogurt - 1 ½ tsp baking powder + ¼ tsp salt - 1 ½ tbsp granulated sugar - 1 ½ tbsp vanilla extract  - 1 egg + 1 tbsp water, for egg wash Almond Filling: - ⅓ cup butter, softened - 1 egg - 1 cup almond flour - ½ cup granulated sugar - 2 tsp almond extract - 1 tsp vanilla extract - ¼ tsp salt - ½ cup sliced almonds Maple Glaze: - 1 cup powdered sugar - 4 tbsp @Vital Proteins Collagen Peptides - 3 tbsp maple syrup - 1 tsp vanilla extract
Instructions: Preheat the oven to 400F. Line 2 baking sheets with parchment paper; set aside. In a medium bowl, combine all the ingredients for the almond filling, and mix well. Set aside. In a large bowl, combine the ingredients for the dough, and mix. Then, roll the dough out into a large rectangle. Spread the almond filling mixture over half of the rectangle, leaving about an inch around the edges. Fold the unfilled half over, crimp the edges together and roll the edge under the bottom seam to seal.  Cut down half of the dough long ways, then make 3 cuts to create 8 total pieces. On each piece, make 4 cuts about ¾ of the way through to form the “claw.” Fan out the dough slightly to separate the “fingers.” Brush the tops of the claws with egg wash and sprinkle the tops with sliced almonds. Bake at 400F for 15-20 minutes, or until golden brown.  While they are baking, whisk together the ingredients for the maple glaze in a medium bowl. Allow the claws to cool slightly. Then drizzle with glaze and dust with powdered sugar. Enjoy!
