This might be the best “salad” you’ll ever eat… although I don’t really want to call it a salad. You’ll see why. Steps: Cook the potatoes: Start with baby potatoes. Boil them in heavily salted water until tender, cutting any larger potatoes in half so they all cook evenly. Make the dressing: Mix mayonnaise, tahini, soy sauce, sesame seeds, nigella seeds, chili oil, minced garlic & ginger, and a good squeeze of lemon juice. Mix well & keep it in the fridge. Crisp the bacon: I wasn’t completely convinced about this part, but Karim insisted. 😂 Cut some bacon and cook it until really crispy. Remove the bacon but keep the bacon fat. Crisp the potatoes: Once the potatoes are cooked, drain them and toss them really well with the bacon fat. Add a little more oil on top, then roast them until they’re deeply golden & crispy. You can also do this in a pan if you prefer. Bring it together: Transfer the crispy potatoes to a bowl, add the dressing, some chopped coriander, and the crispy bacon. Toss really well until every potato is coated in that sauce. And that’s exactly why I didn’t want to call this a salad. People hear “salad” and automatically think healthy or diet food… and this is definitely not that. More importantly, it’s way better than anything that should technically be called a salad. Try it. I guarantee you’ll love it. Ingredients (Serves 4): Potatoes: 700g baby potatoes 2 tbsp salt, for boiling 2 tbsp bacon fat 1 tbsp olive oil Dressing: ½ cup mayonnaise 2 tbsp tahini 1 tbsp soy sauce 1 tbsp sesame seeds 1 tsp nigella seeds 1 tbsp chili oil 2 garlic cloves, minced 1 tsp ginger, minced 2 tbsp lemon juice Toppings: 150g bacon 2 tbsp coriander, chopped
