Spanish Rice Chicken Dinner -1 15.5 oz jar of salsa -3 cups chicken broth -1 12 oz bag frozen corn -1 packet taco seasoning -2 Knorr Spanish rice Packs -2 chicken breast cubed up -1 cup of Queso Blanco -add salsa, chicken broth, corn, taco seasoning, Spanish rice, and chicken to crockpot -mix all ingredients in crockpot -cook for 2-3 hours on high or 5-6 hours on low. Stir throughout cooking -make sure to check on dinner incase it needs more broth. Depends on your slow cooker -warm queso up, once crockpot is done pour queso blanco on top Enjoy!

Looks good my mom made Spanish rice and I was a kid but I haven’t had it in years. The one thing her Spanish rice contained was tomatoes so I think I would add a can of crushed tomatoes. It would really make it wonderful but this looks good. I may try that very soon

Does the rice not get mushy in the crock pot? I make this all the time on the stove top, I use canned chicken sometimes, sometimes I’ll use ground beef, I recently used the chipotle chicken from Costco and that was yummy. I also add black beans and some tomatoes with green chilis. Then top with regular shredded cheese like you said. It’s so customizable but I never considered putting it in the crockpot.
