Day 5/30: Perfecting the Peach Cobbler! 🍑 I’m a die hard peach crumble girlie but have been wanting to perfect my cobbler recipe and have finally done it! It is soft, juicy and incredibly comforting with a buttery biscuit topping. Oh and, it comes together with just 10 minutes of work 😮‍💨 Here’s the recipe because I love you all 🫶🏻 Ingredients: Peach Filling: 4 lb yellow peaches, cut into 1-inch cubes 1/3 cup (66 g) brown sugar 1/4 cup (50 g) white sugar 1 tsp vanilla extract 2 tbsp lemon juice 1 tsp ground cinnamon 1/4 tsp salt 2 tbsp cornstarch 2 tbsp melted butter Biscuit Topping: 2 3/4 cups (360 g) all-purpose flour 1/2 cup (100 g) granulated sugar 2 1/2 tsp baking powder 1 1/4 tsp salt 12 tbsp (170 g) cold unsalted butter, cut into chunks 3/4 cup (180 g) buttermilk 1/2 tsp ground cinnamon + 2 tbsp turbinado sugar (for sprinkling) Instructions: Heat oven to 350°F (175°C). Grease a 9x13-inch baking dish. Make the Peach Filling: In a large bowl, combine peaches, brown sugar, white sugar, vanilla, lemon juice, cinnamon, salt, cornstarch, and melted butter. Toss until all peaches are evenly coated. Spread mixture evenly into the prepared baking dish. Make the Biscuit Topping: Add flour, granulated sugar, baking powder, and salt to the bowl of a food processor. Pulse once to combine. Add cold butter pieces and pulse until the mixture resembles coarse crumbs (pea-sized bits of butter should remain). Pour in the buttermilk and pulse just until the dough comes together. Do not overprocess — it should still look a little shaggy. Assemble & bake: Drop spoonfuls of biscuit dough evenly over the peach filling. Lightly spread the dough so it covers most of the peaches without sealing completely (allows steam to escape). Sprinkle the top with cinnamon and turbinado sugar. Bake for 50 minutes, or until the biscuit topping is golden brown and the peach filling is bubbling.
