Bánh đúc is one of the most traditional and humble Vietnamese rice cakes, enjoyed by locals from northern to southern Vietnam. While every region has its own way of serving it, the base of bánh đúc remains the same everywhere, a simple rice flour batter cooked until firm, cooled to room temperature, and cut into soft cubes. What makes bánh đúc special is how it is eaten. Across Vietnam, it is commonly served with fermented sauces such as fermented shrimp paste or fermented soybean paste, flavors deeply tied to everyday Vietnamese food culture. In this region, I found a particularly interesting version. The bánh đúc is topped with a thick, savory gravy made from ground pork and wood ear mushrooms, the same style of sauce traditionally used for bánh bèo from Huế. It is finished with a spoonful of locally made fermented anchovy sauce, adding deep umami, gentle funk, and a rich savory depth that transforms the dish. This is one of the most distinctive bánh đúc variations I have encountered in Vietnam. For those who do not eat fermented shrimp paste, bánh đúc is also commonly served with a balanced sweet and salty fish sauce. Bánh đúc has long been considered a working-class Vietnamese snack, rooted in simplicity, affordability, and regional creativity. It is a dish that reflects how Vietnamese cuisine turns basic ingredients into something deeply satisfying, and why local variations matter as much as the dish itself.
