Serve with tortilla chips or spoon over a potato and make it a meal. Vegan Queso with Black Beans Makes 4 servings Ingredients: 1 (10.9 oz) package vacuum-packed silken tofu ⅓ cup nutritional yeast 1 ½ tablespoons taco seasoning ½ cup vegetable broth 1 (4 oz) can diced green chiles 1 (15 oz) can black beans, drained and rinsed Juice from ½ lime To garnish: jalapenos, red onion, cherry tomatoes, cilantro Instructions:  Add the tofu, nutritional yeast, and taco seasoning to a blender and puree until smooth.  Transfer the pureed tofu to skillet over medium heat and add the broth, green chiles, and black beans. Stir well and bring to a simmer just for a minute or two. Turn off the heat, add the juice from 1/2 lime and salt to taste. Garnish with jalapeño slices, red onion, cherry tomatoes, and/or cilantro and serve with tortilla chips!
