Time to elevate your thanksgiving dessert game with this incredible Caramel Chocolate Pecan Pie!! 🥧 It replaces the typical corn syrup filling with a delicious brown sugar caramel AND has a chocolate ganache layer.. I mean, consider me sold 🤤  Servings: 1 9” pie   Time: 1.5 hours  Crust ingredients:  - 1 1/3 cups flour (175g) - 1/2 cup butter (113g), cold & cubed - 2 tsp sugar  - 1/2 tsp salt - 2 tbsp ice cold water Pecan filling: - 3/4 cup white sugar (150g) - 1/2 cup brown sugar (100g) - 1 cup heavy cream, room temp (240g)  - 1/4 cup butter (60g) - 1 egg, whisked - 3 cups chopped pecans (360g), lightly roasted. I use a mix of halves and pieces - 3/4 tsp salt Ganache: - 100g dark chocolate - 1/4 cup heavy cream (60g)   Method: - Crumb the butter into the flour, sugar and salt. Add water and lightly knead just until the dough starts to come together. Cover in cling film and refrigerate for 30 min  - Preheat oven to 350F and line pan with butter - Roll out the dough and fill into the pan. Prick with a fork, cover with parchment paper filled with rice or beans. Bake for 8 min - Place the sugars in a pan and cook over low heat until they melt. Stir for a couple minutes just until they no longer feel grainy. Add cream bit by bit and keep mixing until the caramel becomes smooth. Add butter and salt and mix. Let cool at room temp - Prepare ganache by pouring hot cream over the chocolate, cover with a lid for 5 min and then mix until smooth - Spread the ganache on the pie crust, and refrigerate for 10 min - When the caramel mix is no longer hot (~10-15 min later), whisk in the egg. Then mix in the toasted pecans  - Transfer the pecan mix to the pie, spread until even, and feel free to decorate with more pecans if you’d like - Bake for about 30 min until the pecan mix feels somewhat set - Let the pie cool completely before serving  (I actually prefer it refrigerated!)  #thanksgiving #thanksgivingrecipes #pecanpie #chocolatepecanpie
