Instead of cheese, I used nutrional yeast for the cheesy flavor! Potato Soup (serves 3-4)🥣🥔 ingredients: -4 large russet potatoes -one large yellow onion -a head of garlic -1/2 cup nutrional yeast -one box veggie broth -one block of tofu -carrots (2 large carrots or half a bag of baby carrots) -chopped stalk of celery -@LightLife Bacon (4-5 pieces) -seasonings: oregano, smoked paprika, black pepper, garlic powder -olive oil or butter -plant milk Directions: Cook the bacon in a pot with a small amount of oil or butter, then remove, crumble, and set it aside (vegan bacon won’t produce as much grease as animal bacon). cook down the onion and celery in the bacon grease. Add the garlic and seasonings and let everything cook for a minute. Add the carrots, chopped potatoes, and veggie broth plus a bit of water (i filled half of the veg broth box up w water to measure). Let everything simmer until the vegetables are tender. Stir in half of the crumbled bacon and the block of tofu, then blend with an immersion blender until smooth and creamy. Add plant milk until your desired consistency. Stir in the nutritional yeast near the end of cooking. Serve topped with the remaining crispy bacon. #potatosoup #plantbased #girldinner #tofu #vegan
