I would also like to mention since you mentioned elevation, if you make the toffee at elevation, make sure to decrease the temperature he used by 2 degrees for every 1000 feet above sea level

Btw, the banana bread with brown butter, milk powder and miso came out CRAZY good. I used the Ina Garten Banana Crunch Muffin recipe. I make granola at home with oats, sliced almonds, cashews and hemp hearts, so that’s what I used for the crunch. Made two loaves from that recipe in a 4x8- ish parchment lined bread tin.

I made these for a get together of about 30 friends for the holiday weekend! They were amazing, after the first night the grownup had me wait until the kids went to bed to cook the last batch so they didn’t have to share! I’m just glad I have all the ingredients now to make them for myself!

I have a silly question. How do you go about freezing the cookie dough so that it is both 1. sealed tight enough to avoid absorbing freezer flavor AND 2. not being squished together into one inseparable blob. For some reason I can never manage one without the other occurring. 😅

Love how technique-based you are, opposies and all. I'm allergic to soy, so can't include the miso. Do you have any suggestions for a sub? I imagine it adds an integral even if subtle part to the flavour profile.
