Super soft, warm, with the perfect amount of sweetness blueberry banana cupcakes🤤 Ingredients: •113g Butter •25ml oil •150g light brown sugar •2 large eggs •1 tsp vanilla extract •1 tsp Cinnamon powder (completely optional) •300g mashed banana •100g Greek yogurt •227g all purpose flour •1 tsp baking powder •1/2 tsp baking soda •1/2 tsp salt •150-200g blueberries Instructions: •Brown the butter:In a small saucepan over medium heat, melt the butter. Continue cooking, stirring often, until it turns golden brown and smells nutty. Remove from heat and let it cool slightly. •Mix the wet ingredients:In a large bowl, add the browned butter and light brown sugar. Whisk until well combined. Add the eggs, vanilla extract, cinnamon powder, mashed bananas, and Greek yogurt. Mix until smooth and fully incorporated. •Add the dry ingredients: Sprinkle in the baking powder, baking soda, and salt. Add the all-purpose flour and gently mix just until combined. Do not overmix. •Fold in blueberries : toss the blueberries in some flour and then Gently fold in the batter evenly distributed. •Bake: Divide the batter evenly into a lined cup cakes tin.Bake at 375°F (190°C) (fan oven) without opening the oven. Continue baking for 15 minutes, or until a toothpick inserted into the center comes out clean. •Remove from the oven and allow the cup cakes to cool before serving.
