@ivanetspastry: The simplest forms hold an enormous amount of potential ! A 7 cm perforated ring, simply squeezed from two sides, takes on the elegant shape of a drop, its silhouette reminiscent of an almond. And from there came the idea for an almond tartlet 🙌🏼 As any respectable tartlet should, it has a thin, perfectly baked silhouette, highlighted with a glossy egg-yolk wash. Inside — an incredibly nutty almond sponge, while above it, a thick almond praline lazily and appetizingly drips down the surface.. On top, a rhythmic arrangement of almond shingles completes the composition.
