@sarahsweets017: I tried making pumpkin seed brittle once and immediately understood why people make this every fall 😭🍂 It’s buttery, salty-sweet, and ridiculously crunchy with roasted pumpkin seeds in every bite. Pumpkin Seed Brittle 2 cups granulated sugar 1 cup light corn syrup 1 cup water 2 2/3 cups roasted & salted pumpkin seeds 2 tbsp unsalted butter 1 tsp vanilla extract 1/2 tsp baking soda 1/8 tsp salt Add the sugar, corn syrup, and water to a saucepan over medium-high heat. Don’t stir, just gently swirl the pan as needed. Cook to 280°F, then add the pumpkin seeds. Continue cooking until the mixture reaches 300°F. Remove from the heat and stir in the butter, vanilla, baking soda, and salt. Pour onto a parchment-lined baking sheet. Let completely cool and harden, then crack into pieces.
