Creamy Mash with Chorizo & Chicken Sauce A rich and comforting dish with buttery garlic mash, seasoned chicken, crispy chorizo and a creamy sundried tomato sauce. Ingredients Creamy Garlic Mash 4 medium-sized potatoes, peeled and cut into chunks 40 g butter 100 ml double cream 3 garlic cloves, finely minced ½ tsp garlic powder ½ tsp onion powder ½ tsp salt, or to taste ¼ tsp black pepper, or to taste Grated Parmesan to taste Chicken 1 large chicken breast, sliced horizontally into 2 thinner pieces 1 tsp paprika ½ tsp garlic powder ½ tsp onion powder 1 tsp all-purpose seasoning ¼ tsp salt ¼ tsp black pepper 1 tbsp oil Chorizo & Cream Sauce 150 g chorizo, sliced ½ medium onion, finely diced 3 garlic cloves, minced 6–8 sundried tomatoes, chopped 1½ tbsp tomato paste 250 ml chicken stock 150 ml double cream 1 tsp oil, if needed Method 1. Make the Creamy Garlic Mash Peel and cut the 4 medium potatoes into evenly sized chunks. Place them in a saucepan, cover with cold salted water and bring to a boil. Cook until completely tender. While the potatoes cook, add 100 ml double cream, 40 g butter and 3 minced garlic cloves to a small saucepan. Heat gently until the butter has melted and the cream is hot and infused with garlic. Do not boil. Drain the potatoes thoroughly and return them to the saucepan. Mash until smooth,add grated Parmesan. Gradually add the hot garlic, butter and cream mixture, mixing until creamy. Season with ½ tsp garlic powder, ½ tsp onion powder, ½ tsp salt and ¼ tsp black pepper. Taste and adjust as needed. Keep warm. 2. Prepare & Cook the Chicken Slice 1 chicken breast horizontally through the middle to create 2 thinner pieces. Season with 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, 1 tsp all-purpose seasoning, ¼ tsp salt and ¼ tsp black pepper. Add 1 tbsp oil directly to the seasoned chicken and rub everything together well, ensuring the seasoning sticks to the chicken. Heat a frying pan over medium-high heat. Cook the chicken for approximately 4–6 minutes per side, depending on thickness, until golden brown and cooked through. Remove from the pan and set aside. 3. Make the Chorizo & Cream Sauce In the same pan, add the 150 g sliced chorizo and cook for 2–3 minutes, allowing it to brown and release its oils, take out and set aside  To the same pan, add the ½ diced onion and cook for 3–4 minutes until softened. Add the 3 minced garlic cloves and 6–8 chopped sundried tomatoes. Cook for another 1–2 minutes. Stir in 1½ tbsp tomato paste and cook for 1 minute. Pour in 250 ml chicken stock, scraping the bottom of the pan to release all the flavour from the chicken and chorizo. Simmer for 3–5 minutes to allow the stock to reduce slightly. Lower the heat and stir in 150 ml double cream. Return the chicken and chorizo  to the pan and coat it generously in the sauce. Simmer gently for 3–4 minutes, until the sauce has thickened.
