The real reason no one launches rockets from mountains is because orbit is about speed, no altitude. Also imagine the nightmares transporting the parts up mountains.

the earth is stretched at the equator so its not about mountains but the closer to the equator means closer to space this is why NASA launches from florida and ESA from french guinea

Logistics. Rockets are very difficult to transport, getting a several hundred ton rocket up a mountain would be ridiculously time consuming and expensive and come with much more added risk
