@loveheartkitchen: RED VELVET CAKE ❤️ Soft, rich and chocolatey with the most melt-in-your-mouth crumb and a thick layer of creamy cream cheese frosting. This red velvet disappeared very quickly in our house! ❤️ 15cm/6-inch single-layer cake Ingredients: • 120g (1 cup) plain (all-purpose) flour • 12g (2 tbsp) unsweetened cocoa powder • 1/2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 200 g (1 cup) caster/white sugar • 1 large egg • 120 mL (1/2 cup) neutral (mild tasting) oil • 90 mL (3/8 cup) buttermilk • 30 g (2 tbsp) full-fat sour cream • 1 tsp vanilla extract • 1/2 tsp white vinegar • 60 mL (1/4 cup) hot coffee • 1/2 tsp concentrated red food colouring Method: • Preheat the oven to 170°C/340°F. Grease and line a 15 cm/6-inch round cake tin. • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside. • In a large bowl, whisk together the sugar, egg and oil until smooth and well combined. • Add the remaining wet ingredients and whisk until well combined. • Add the dry ingredients and gently whisk just until combined. Do not overmix. • Pour the batter into the prepared tin and bake for 50–60 minutes, or until a skewer inserted into the centre comes out without wet batter. Start checking at around 45 minutes. • Leave the cake in the tin for 20 minutes, then carefully turn out onto a wire rack to cool completely. CREAM CHEESE FROSTING Ingredients: • 125g full-fat cream cheese • 35g unsalted butter, softened • 100g icing sugar / powdered sugar • 1/2 tsp vanilla extract • Pinch of salt Method: • Beat the butter and cream cheese together until smooth and creamy. Add the icing sugar/powdered sugar, vanilla and salt, then beat until light and fluffy. • Spread generously over the completely cooled cake.
