Having worked in the restaurant business in many different jobs, this raises a few questions. First, I don't understand why you would be paying the restaurant 5% for a table that didn't tip. If it is a tipout situation it should be based on actual tips not estimated tips. And if it is a tipout situation, who is the tipout for? I would question having to tipout if I am bussing my own tables. And if the tipout was for the cooks, I'd be looking for a job elsewhere. You shouldn't be expected to tipout the cooks because the owner won't pay them properly. There is a lot of context missing in this video. And a lot of people talking out of their asses with their comments.

I always still tipped and cleaned up what I could from my kids. They are my responsibility. Mind you I didn’t take them out when in they were stage of throwing food on the floor. I’m talking about the normal not quite coordinated with utensils yet.
