Blue Diamond's Almond Breeze — the best-selling almond milk in America — was sued for false advertising after it was revealed that only 2% of the product is actual almonds. The rest: water, sugar, carrageenan, sunflower lecithin, and vegetable gums. An entire carton contains roughly 38 almonds. The "creamy" texture isn't from the almonds — it's from hydrocolloid gums that absorb up to 20 times their weight in water. That mouthfeel is manufactured. Silk was hit with the same lawsuit. Both brands settled. Neither is required to disclose the percentage of almonds on the carton — so most consumers still don't know. Titanium dioxide — the paint whitener banned from food across the EU — has been added to some almond milks to create a whiter, more "milky" appearance. Carrageenan — used as a thickener — prompted researchers at the University of Chicago to petition the FDA to outlaw it from food after studies linked it to gastrointestinal inflammation and tumour development. Some brands have since removed carrageenan. Others haven't. A product named after a nut that's 98% not that nut. The packaging shows almonds. The label says "almond milk." The carton is 98% water, gums, emulsifiers, and synthetic vitamins. Homemade almond milk needs two ingredients: almonds and water. A blender and five minutes. No gums. No whiteners. No lawsuits.
