@hannah | healthy-ish recipes: Hawaiian Chicken Casserole
Ingredients:
For the sauce:
1/2 cup brown sugar or brown sugar substitute
1/4 cup soy sauce
1/4 cup G. Hughes Teriyaki Sauce
3/4 cup chicken broth or chicken bone broth
1 tbsp garlic powder
For the casserole:
1.5 lbs of chicken tenderloins or breasts (diced and marinated in 1/2 a bottle of G Hughes Teriyaki sauce)
1 cup quinoa, rinsed
1/2 large red onion, diced
1 20 oz can of pineapple tidbits in pineapple juice
Directions:
1. Preheat oven to 425 F.
2. Dice up chicken tenderloins or breasts and marinate in 1/2 bottle of G Hughes Teriyaki Sauce. Marinate in the fridge for at least 30 minutes.
3. In a bowl, mix together all ingredients for the sauce. Set to the side.
4. In a 9x13 casserole dish, add in quinoa, diced onion, pineapple and chicken. Stir to combine. Add sauce and stir again until evenly combined. Smooth into an even layer.
5. Cover tightly with foil and back for 40-45 minutes until fully cooked and quinoa is fluffy.
6. Remove foil and stir. Uncover and cook for 10-15 more minutes.
7. Top with a drizzle of teriyaki sauce. Serve with roasted veggies or a side salad. Enjoy!
*if using long grain white rice: use 1/2 cup of chicken broth instead of 3/4 cup. Be sure to rinse the rice beforehand.
