Lavariya (Sri Lankan Sweet Coconut Dumplings) Ingredients- For the Filling: 💌 1 tsp ghee 💌 2 cups grated coconut 💌 ½ cup jaggery (adjust to taste) 💌 ¼ tsp cardamom powder For the Dough: 💌 1½ cups idiyappam flour (rice flour) 💌 Salt, to taste 💌 Boiling water, as needed 💌 1 tsp ghee Method- 🌿 Heat ghee in a pan. Add the grated coconut, jaggery and cardamom powder. Mix well and cook until the mixture becomes dry. Remove from the heat and let it cool completely. 🌿 In a large bowl, combine the idiyappam flour and salt. Gradually pour in boiling water while mixing with a spatula. Once the dough is cool enough to handle, knead it with your hands until smooth and soft. Add the ghee and knead again until well incorporated. 🌿 Fill an idiyappam press with the dough and press out a small nest of idiyappam. Place a spoonful of the coconut filling in the center, then fold and seal the edges. 🌿 Steam the dumplings for 10 minutes. 🌿 Serve hot and enjoy!
