My parents made something similar where they would hard boil the eggs and then diced the eggs before adding it to the gravy. my parents called it creamed eggs on toast. My mom would add green onion to the mixture along with salt and pepper to the gravy mixture.

I make similar with cut up hard boiled egg. Eggs golden rod always heard it called. Love it on toast.
