Almond Milk and Almond Cookies .. One batch of almonds, two recipes. Make a creamy homemade almond milk first, then use the leftover pulp to bake soft banana-almond cookies — almost nothing goes to waste. For the almond milk • 200 g raw almonds, about 1⅓ cups • 500 ml water, about 2 cups + 2 tbsp • 2 pitted dates • Small pinch of salt For the cookies • Almond pulp left after straining the milk • 1 ripe banana • 1 large egg • Melted dark chocolate, optional for dipping Method 1. Cover the almonds with water and leave them to soak until softened. Drain well. 2. Transfer the soaked almonds to a blender. Add 500 ml fresh water, the dates and salt, then blend until completely smooth. 3. Pour the mixture through a nut-milk bag or fine cloth and squeeze firmly to extract as much milk as possible. Chill the almond milk in a sealed bottle. 4. Keep the almond pulp and squeeze out any remaining moisture. A drier pulp will make the cookies much easier to shape. 5. Mix the pulp with the banana and egg, mashing everything together until you have a thick, moldable mixture. 6. Divide into approximately 33 g portions and roll into balls. This should make around 11–12 cookies. 7. Place them on a parchment-lined tray, gently flatten each one and create a few lines on top with a fork. 8. Bake at 180°C / 350°F for around 20 minutes, or until lightly golden around the edges. 9. Allow the cookies to cool completely. For the finishing touch, dip one side in melted dark chocolate and leave to set.
