Shape into bagels, place on a baking tray with spaces in between, let them rise at room temperature for exactly 30 minutes, then let them rise for another 10 minutes in a 100°C oven (without fan, top and bottom heat), then increase the temperature to 180°C and bake until golden brown. That's it, done! 😌 Pastry Cream: 600 1 ml milk (3 cups) 150 g powdered sugar (2 fingers less than 1 cup) 75 g cornstarch (3 heaped tablespoons) 20 g flour (2 level tablespoons) 50 ml liquid cream (about half a teacup) 75 g white chocolate 10 g vanilla (1 packet) Preparation Put the sugar and 3/4 of the milk in a saucepan and bring to a boil. Whisk the remaining milk with the flour and cornstarch. Add this mixture to the boiling milk through a sieve. Once it thickens, turn off the heat. Add the chocolate and vanilla and stir until the chocolate melts. (I cooled it on my counter. You can cover it with plastic wrap so that it touches the cream and, once cooled, add the cream and whisk with a mixer.) For the sauce: 75 g margarine or butter 75 g dark chocolate 35 g praline (1 tablespoon breakfast cereal) (Chocolate) Preparation Melt the margarine on the stove, turn off the heat, add the chocolates and melt them slightly at room temperature, not too cold or too hot.
