This is how I check if my sweetcorn is ready to harvest without picking it 🌽🌽🌽 Harvesting corn too early or too late can negatively impact the flavour so it’s really important to harvest at the right time. If you harvest too early your corn won’t be plump and sweet, but harvest too late and it will become mealy and starchy. Sweetcorn is in the grass family and, like other grasses, is pollinated by wind. The male flowers, called tassels, sit at the top of the plant & release pollen. The female flowers, the part that will eventually turn into ears of corn, sit lower down. The silks protruding from the female flowers trap the pollen drifting down from the tassels which is then taken down to fertilise the kernels. Each silk strand is responsible for producing one kernel of corn. Before your corn can be ready to harvest it needs to be pollinated. You can increase your chances of pollination by planting in a grid.  The silks of the corn ears most commonly start off yellowy green. Once pollination happens the corn will start to develop and as this happens the silks will turn brown. Some silks start off a different colour like pink for example but when ripe they still turn brown. Ripe corn will have brown silks all the way from the tips to the top of the corn ear. When I see that the silks have turned brown, before picking my corn I always peel back the leaves of the ears to reveal a small section of the cob inside. I then use my fingernail to burst one or two of the kernels. If clear liquid comes out, the corn is not yet ripe. If the liquid that comes out is milky, the corn is ripe. If there’s no liquid coming out it could be that the corn is overripe. The final test is to pick a cob and taste it.
