Ingredients: - 1 cup rolled oats - 1 cup plant-based milk (such as almond, soy, or oat milk) - 1/2 cup finely grated carrots - 1 ripe banana, mashed - 1/4 cup maple syrup or agave nectar - 1/4 cup applesauce - 1 tsp vanilla extract - 1 tsp ground cinnamon - 1/2 tsp ground nutmeg - 1/4 tsp ground ginger - 1/2 tsp baking powder - 1/4 tsp salt - 1/2 cup of plant based yogurt - 1/4 cup chopped walnuts (optional) Instructions: 1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper. 2. Mix the Wet Ingredients: In a large mixing bowl, combine the mashed banana, plant-based milk, maple syrup, applesauce, and vanilla extract. Mix well. 3. Mix the Dry Ingredients: In another bowl, mix the rolled oats, baking powder, salt, cinnamon, nutmeg, and ginger. 4. Combine Wet and Dry Ingredients: Add the dry ingredients to the wet ingredients and mix until well combined. Stir in the grated carrots, and if using, fold in the chopped walnuts. 5. Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. 6. Cool and then spread your yogurt on top of the baked oats 7. Optional Toppings: Top with a drizzle of maple syrup, or a sprinkle of chopped nuts. *Make it your own! Customize your baked oats with other add-ins such as chopped dates, pecans, or even vegan cream cheese for a more decadent treat #mealprep #veganrecipes #veganbreakfast #fypage #healthymealideas
