@lafocacciaqueen: La Mia Torta Con Le Fragole. My Italian Strawberry Cake. Even though my power went out for 2 hrs last night during this terrible storm, I still managed to finish making my cake. Made with only 1 egg. It’s incredibly soft and so delicious. Can’t wait for you to try this one. Note-You can substitute the strawberries for blueberries or chocolate chips. I only used 1/2 cup of lukewarm milk. You will bake the bake for 10 mins at 355 degree F. After 10 minutes reduce the heat to 320 degrees F for approx 45 mins or until toothpick comes out nice and clean. Your cake should be lightly golden. Make sure to check it after 40 mins. Use a 9 inch springform pan or 22-24 cm pan. I like to line my pan with parchment paper. It protects the cake from burning. You will be making this cake on repeat, I guarantee you. Recipe ⬇️ Pan: 9-inch (22–24 cm) round cake pan Ingredients * ¾ cup granulated sugar * ⅓ cup softened butter * 1 large egg * ½ cup + 1 tablespoon lukewarm milk (I only used 1/2 cup milk) * 1½ cups all-purpose flour (spoon & level) * Zest of 1 lemon * 1 teaspoon baking powder * Pinch of salt * About 2½ cups strawberries, sliced in half * 1 teaspoon granulated sugar, for sprinkling over the strawberries * Note-You can sub strawberries for blueberries or chocolate chips Instructions 1. Prepare the strawberries: Wash and slice the strawberries. Set them aside. 2. Prepare the pan: Grease and lightly flour a 9-inch round cake pan. You can also line the bottom with parchment paper. 3. Preheat the oven: Preheat to 355°F for 10 minutes. 4. Make the batter: In a large bowl, beat the softened butter and ¾ cup sugar until light and creamy. 5. Add the egg and lemon zest. Mix until well combined. 6. In a separate bowl, combine the flour, baking powder, and salt. 7. Gradually add the dry ingredients to the butter mixture, alternating with the lukewarm milk. Mix just until you have a smooth batter. Do not overmix. 8. Assemble the cake: Pour the batter into the prepared pan and spread evenly. 9. Arrange the sliced strawberries evenly over the top of the batter. Sprinkle 1 teaspoon of sugar over the strawberries. 10. Bake: Place the cake in the oven for 10 mins, then immediately lower the temperature to 320°F. Bake for approximately another 45 minutes, or until lightly golden and a toothpick inserted into the center comes out clean. 11. Let the cake cool in the pan for about 10–15 minutes, then carefully remove it and transfer it to a cooling rack. 12. Transfer to a serving plate and lightly dust with powdered sugar Tip: The berries will release some juice as they bake, so make sure the center of the cake is fully baked before removing it from the oven.
