My highly requested vodka pasta recipe!! And yes this is enough for my family of 5 and leftovers! Also if you like spicy I reccomemd adding a bit of Calabrian chili paste it’s so good! Vodka pasta recipe: Approximate ingredients:(I don’t measure and I’m heavy handed) - half a large yellow onion(diced) - At least 3 cloves of minced garlic(preferably not jarred) - 2 tbsp olive oil - 1 can of tomato paste( 8 oz) - Salt and pepper to taste(as I go) - 1 tsp of red pepper flakes(or to preference depending on how spicy you like it) - 2 shots of vodka(ish) - 1 1/2 - 2 cups of heavy whipping cream(preheated) - Pasta water(to desired consistency) - Grated Parmesan cheese(to preference) - Fresh basil to top 1. On medium low heat add 2 tbsp of olive oil to a pan. Add in onions and cook for a few minutes until they’re translucent. Once translucent add in garlic and cook until garlic is slight brown but not burnt.  2. Add a little salt and pepper at this step or throughout.  3. Start to boil your pasta. Make sure you reserve some pasta water at some point.  4. Once garlic is slightly brown/tan, still on medium low heat, add in tomato paste and red pepper flakes and mix into the onions and garlic until combined.  5. Smooth paste over the pan and increase heat just barely(medium) and let cook until tomato paste deepens in color(a few minutes). 6. Once tomato paste deepens, turn heat back to medium low, and add in vodka and mix until combined. Careful it’s on lower heat so it dosent burn.  7. Add more salt and pepper to taste.  8. Slowly add in the preheated heavy whipping cream while mixing to combine.  9. Once combined add pasta water to reach desired consistency. The sauce will start to thicken as well once cooled down so keep that in mind during this step.  10. Grate in at least a half cup of Parmesan cheese, or more if you like parm.(please no pre grated cheese, it won’t melt) 11. Spoon the pasta into the sauce. I leave mine unstrained so the extra pasta water helps emulsify the sauce even more.  12. Plate pasta and top with some fresh basil, more grated parm and maybe some burrata and olive oil if you’re feeling extra! #italian #cookwithme #sundaydinner #vodkapasta #Recipe
