Chicken Gnocchi Soup Ingredients * 1 tablespoon olive oil * 2 chicken breasts, cubed * Salt, pepper, garlic powder, and onion powder, to taste * 3 tablespoons butter * 1 cup diced white onion * 1 cup shredded carrots * 1/4 cup diced celery * 1/2 tablespoon dried thyme * 1 tablespoon minced garlic * 32 ounces chicken broth * 16 ounces gnocchi * 1 1/2 cups heavy cream, room temperature * 4 ounces spinach (about 4 cups) * Grated Parmesan cheese, for serving Directions 1.
