Heat olive oil in a pan, cook leeks on medium heat until golden & caramelised (20 mins). Add garlic, season with salt & pepper. 2. Stir in orzo, then add veg stock. Simmer for 10 mins, stirring occasionally. 3. ⁠Add cannellini beans, lemon juice & zest, plus a big pinch of salt.
