OK now for my big disclaimer. i’m not suggesting you go out in the wild and catch your own salmon and eat it raw. there are definitely risks associated with eating any raw fish, so you need to be aware of those risks. however, i did a lot of research and felt ok to take the risks we did. we were eating fresh water fish, which a lot of people are scared of, but according to Meat Eater, the concern over eating freshwater fish raw is overblown. they interviewed tim sly, who has a phd in epidemiology and focuses on food-borne illness, and said the following: ‘“Well you don’t have much to worry about actually,” Sly told MeatEater. “There’s a lot of strange things happening in marine fish, but freshwater fish you’ve really got hardly anything to worry about there at all.” He says there are more prevalent parasites, dangerous bacteria, and toxins in saltwater fish, despite the higher prevalence of eating those species raw. Heavy metals may be of greater concern in freshwater, and cooking doesn’t affect that contamination.’ SO, there is definitely still a risk, but we decided to go for it. we kept the fish really cold before eating it and prepped it as soon as we could. we cleaned it thoroughly and i kept my work station really clean. if you want to be even safer, you can freeze the fish for a few days to make sure any bacteria is killed, so you do whatever you’re most comfortable with! that’s all for my rant!! it was a really yummy poke bowl ok!!!! 🫶🏼🫶🏼🫶🏼
