✨This is my Cinnamon Roll Cheesecake recipe! It’s honestly one of my favorites because it combines two of the most delicious desserts into one and it’s the perfect dessert for this time of year. ✨ ~COOKIE CRUST • 370 g Digestive biscuits or Graham crackers, finely crushed • 80 g unsalted butter, melted • 1 tbsp honey • 1 tsp ground cinnamon ~ CHEESECAKE FILLING • 800 g cream cheese, room temperature • 140 g Greek yogurt • 40 g heavy cream • 4 large eggs • 2 egg yolks • 70 g granulated sugar • 80 g honey • 1½ tbsp vanilla bean paste or vanilla extract • 1 tbsp cornstarch, dissolved in 2 tbsp water ~CINNAMON ROLL CRUMBLE • 130 g all-purpose flour • 110 g brown sugar • 3-4 tsp ground cinnamon • 75 g unsalted butter, melted • 1½ tsp vanilla extract ~CINNAMON VANILLA FROSTING • 225 g Philadelphia cream cheese • 240 ml heavy cream • 100 g powdered sugar • Vanilla bean or vanilla bean paste, to taste • ½ tsp ground cinnamon ~INSTRUCTIONS 1. Preheat the oven to 325°F. 2. Mix the crushed cookies, melted butter, honey and cinnamon until the mixture resembles wet sand. Press firmly into the bottom of your cheesecake pan, slightly bringing the crust up the sides if desired. Bake for 10–12 minutes, then let it cool completely. 3. While the crust cools, prepare the cinnamon crumble. Mix the flour, brown sugar, and cinnamon. Add the melted butter and vanilla, then mix with a fork until small and medium-size crumbs form. Don’t overmix into a paste. Set aside. 4. For the cheesecake filling, beat the room-temperature cream cheese until completely smooth. Add the Greek yogurt, heavy cream, sugar, honey and vanilla, and mix just until combined. 5. Add the cornstarch dissolved in water and mix until incorporated. Add the eggs and egg yolks one at a time, mixing on low speed just until combined. Don’t overmix, as you want to avoid incorporating too much air. 6. Pour half of the cheesecake filling over the cooled crust and spread gently into an even layer. Sprinkle half of the cinnamon crumble evenly over the cheesecake. Add the remaining cheesecake filling and gently spread it over the crumble. Finish with the remaining cinnamon crumble, covering the top evenly. 7. Cover the cheesecake pan tightly with aluminum foil to prevent any water from getting inside. Place it in a larger baking pan or tray and add a small amount of hot water to create a water bath. Bake at 325°F for 75–90 minutes, or until the edges are set and the center still has a slight jiggle. Carefully remove the cheesecake from the water bath, let it cool completely, then refrigerate until fully chilled and set, preferably overnight. 8. To make the frosting, beat the cream cheese until smooth. Add the powdered sugar, vanilla and cinnamon and mix until combined. Gradually add the heavy cream and whip until smooth, fluffy and thick enough to pipe. 9.
