Ad @Nando’s UK & Ireland peri honey steak, sweet potato mash + charred corn n courgette salad 🥩🌽  Only 10 minutes needed to marinade 🤏🏾 Protein 53g / Calorie 778 Recipe (serves 1):  -Preheat the oven to 200°C fan. Pierce the 250g sweet potato a few times with a fork and roast whole at 200°C fan for 50 minutes, or until completely soft. Once cooked, scoop the flesh from the roasted sweet potato into a bowl and mash until smooth, seasoning to taste. -Pat dry the steak. Mix together ½ tsp smoked paprika, ½ tsp garlic granules, ½ tsp onion granules, ¼ tsp ground cumin, and black pepper, then rub all over the steak. Coat evenly with 2 tbsp Nando’s Peri-Honey Marinade and leave to marinate for at least 10 minutes, or overnight if you have time. -Whisk together 1 tbsp Greek yoghurt, 1 tbsp mayonnaise, 1 tsp Nando’s Peri-Honey Marinade, 1 tsp lemon juice, ½ tsp Dijon mustard, ¼ tsp smoked paprika, a pinch of garlic granules, and black pepper until smooth. Loosen with a splash of water if needed. -Heat a frying pan over a high heat until smoking hot. Cook the steak for 2–3 minutes per side for medium-rare, depending on thickness. During the final minute of cooking, brush over ½ tbsp of the remaining Nando’s Peri-Honey Marinade, turning once so it becomes sticky and caramelised. -Transfer the steak to a board, brush over the remaining ½ tbsp Nando’s Peri-Honey Marinade, and leave to rest for 5–10 minutes. -Using the same pan, cook 1 corn on the cob and ½ sliced courgette, over a high heat, turning occasionally until nicely charred and coated in the flavour left behind from the steak. Leave to cool slightly, then slice the kernels from the corn. -Combine the large handful of rocket, charred corn, charred courgette, pickled onions, small handful of fresh coriander (roughly chopped), 1 tbsp sunflower seeds, and most of the 20g crumbled feta in a large bowl. Pour over the dressing, toss until evenly coated, and finish with the remaining feta. -Slice the steak against the grain and serve with the sweet potato mash and charred corn salad, finishing with any resting juices from the board. #steak #nandos #sweetpotato#nandosalad
