Every mammal whether it’s an ox, a kangaroo, or any other four legged animal shares the exact same basic spinal blueprint. But a tail isn't just a uniform tube of bone; its anatomy changes drastically from one inch to the next: The Star Shape (Cutting through the Vertebrae): If a butcher cuts right through the solid shaft of a tail bone (a vertebrae), you get that distinct star shape. That’s because the vertebrae have natural bony wings and projections sticking out of them for muscle attachment. When cross-sectioned, those bumps give it a jagged, star-like appearance. The Round Shape (Cutting through the Joints): If the knife lands on the actual joint space between the bones or further down the tail where the vertebrae naturally taper and smooth out you get a clean, rounded disc. People get confused seeing different shapes in oxtail, kangaroo tail, or other game meats, thinking they're looking at completely different biological designs. In reality, you're just looking at two different parts of the same exact skeletal structure.
