@victoriaandersonsnow: PUMPKIN SPICE GRANOLA 🎃🍂 We POWER through granola in our house, and making it at home takes no time at all, saves money, and is even more delicious than store-bought. This pumpkin spice version is CRAVE-WORTHY 🥹 Irresistibly crunchy, perfectly spiced with all those warm and cozy fall flavors, and packed with the BIG clusters that we all grab for. Perfect for yogurt bowls, with a splash of milk, or just grabbing by the handful. Delicious as written, but we sometimes switch it up by adding chocolate chips, raisins, or dried cranberries. Do you! Ingredients Dry: • 3 cups rolled oats • ¾ cup pecans, roughly chopped • ½ cup pumpkin seeds • 1 tbsp pumpkin pie spice • 1 tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • ¼ tsp allspice • 1 tsp salt • 1 tbsp chia seeds • 2 tbsp hemp seeds Wet: • 2 tsp vanilla extract • ¼ cup olive oil (this yields the crispiest granola, but you can also use melted coconut oil) • ½ cup maple syrup • ¼ cup pumpkin purée For topping: • 2 tbsp coconut sugar (or brown sugar) • 1 tsp pumpkin pie spice Optional mix-ins: • ½ cup chocolate chips, raisins, or dried cranberries Directions Preheat oven to 325°F and line a large sheet pan with parchment paper. Combine all of the dry ingredients in a large bowl. In a separate bowl, whisk together the vanilla, olive oil, maple syrup, and pumpkin purée until smooth. Pour over the dry ingredients and stir until everything is evenly coated. Spread onto the prepared baking sheet and firmly press the granola into an even, compact layer, making sure everything is touching. It should cover about ¾ of a large sheet pan. Don’t skip the pressing—this is one of the secrets to getting those big, chunky clusters! Bake for 25–30 minutes, or until golden, watching carefully toward the end. Mine took the full 30 minutes! Remove from the oven and let it cool completely without breaking it apart. It will firm up and get nice and crispy as it cools. Once completely cool, mix together the coconut sugar + pumpkin pie spice and sprinkle over the granola.
