these would also always be waiting for us in my grandmas freezer which i hope she has now as i need to go and visit - don’t be confused at the potato plum combo as its very traditional in poland🤣🤍 (for the knedle) you’ll need: - 400g potatoes (all rounder) - 1 egg - 1/2 cup flour (you may need more or less so keep it handy!) - pinch of salt - 8 small polish sliwki (or small plums!) - 3-4tbsp sugar (for the breadcrumb topping): - 50g unsalted butter - 3-4tbsp bułka tarta (or panko breadcrumbs) (to serve): - thick cream - sugar - cinnamon method: 1. begin by peeling the potatoes and slicing them in half. 2. wash thoroughly and then place into a large saucepan filled with cold water. 3. place on a high heat until boiling: once boiling, set the timer for 25 minutes and lower the heat so that they are gently simmering. 4. once boiled, drain the water and allow the potatoes to cool completely. 5. once cooled, ideally use a ricer and press the potatoes through the ricer. 6. alternatively (if you don’t have one), mash them as finely as possible! 7. add in the egg, 1/2 cup of the flour and a pinch of salt. 8. combine using a large spoon until you form a dough - you may need to add more flour but be careful not to handle the dough too much as it will become stiff. 9. leave the dough to one side whilst you prepare the plums. 10. thoroughly wash the plums and use a knife to carefully slice half way around the edge: just enough to be able to open up and remove the stone. 11. now fill the inside of the plum with about 1tsp of sugar. 12. close the plum shut and pop on a plate. 13. repeat these steps with the rest of the plums. 14. once complete, place the dough on a clean and floured surface. 15. split into 8 equal pieces and roughly form each piece into a ball. now flatten them until they are about 1cm thick circles. 16. place a plum into the centre of one of the dough circles. now carefully fold the dough all around the plum until you form a parcel and now holes are visible. 17. place the dough wrapped plum onto a floured board / surface. 18. repeat these steps with the rest of the plums. 19. now boil water in a large saucepan and place about 4 knedle at a time (depending on how big your pan is) into the boiling water. boil the dumplings until they have risen to the top (about 5 minutes). then, cook for another 4-5 minutes. 20. meanwhile, melt the butter in a seperate frying pan and add in the breadcrumbs. fry for a few minutes, stirring occasionally until lightly golden. 21. remove the knedle from the water using a slotted spoon and repeat with the rest of the knedle. 22. serve whilst warm and top with a generous dollop of cream. 23. sprinkle with as much sugar as you like and a dusting of cinnamon. enjoy xxx #dumplings #knedle #polish #plums #EasyRecipes
