@wokpanbites: Chestnuts aren’t just for roasting—braise them with chicken wings and they soak up all that savory-sweet sauce. Ingredients Chicken wing pieces, peeled chestnuts, 1 tbsp all-purpose flour, water for rinsing, cooking oil, rock sugar (or granulated sugar), scallions, ginger, garlic, dried red chilies, 1 tbsp light soy sauce, oyster sauce, boiling water, salt, chicken bouillon powder, fresh red and green chilies. Instructions Snip each chicken wing piece through the middle so it absorbs the sauce more easily. Add the flour and toss to coat. Add water, wash gently, rinse thoroughly, and drain well. Add a little cooking oil to the wok first. Add the rock sugar and cook over low heat until melted and amber. Add the chicken wings and toss until evenly coated with the caramelized sugar. Add the scallions, ginger, garlic, and dried red chilies. Add the light soy sauce and oyster sauce, then stir-fry until fragrant. Add the peeled chestnuts and enough boiling water to mostly cover the ingredients. Season with salt and chicken bouillon powder. Cover and simmer over medium-low heat for 25 minutes, or until the chicken reaches 165°F (74°C). Add the fresh red and green chilies. Reduce the sauce over high heat, then serve.
