but im just a little feetus ingredients * 2 kg pig trotters, cut into chunks * 200 ml light soy sauce * 100 ml dark soy sauce (for that rich color) * 200 g rock sugar (or substitute with 150 g brown sugar) * 1 tbsp salt * 2 tbsp rice wine or mirin * 1 tbsp whole black peppercorns * 3-4 star anise * 2 bay leaves * 1 stick chinese cinnamon (cassia bark) * 10 cloves garlic, smashed * 1 onion, quartered * 1 thumb ginger, sliced * 2 scallions, cut into big pieces * water, enough to cover instructions 1. first, parboil the trotters. drop them into boiling water for about 5 minutes to get rid of impurities. drain, rinse, and set aside. 2. in a big pot, add your soy sauces, rock sugar, spices, garlic, onion, ginger, and scallions. fill with enough water to cover everything. bring it to a boil. 3. add the trotters back in. lower the heat, and let it simmer gently for 2-2.5 hrs. 4. once done, fish out the trotters. slice them thin, pile onto a plate.
