dip the rice paper only one or two seconds into water. It'll still be hard and easy to handle but it softens while you're filling it

Try with egg and a little milk instead of water.

Rice paper only needs a quick dip in and dip out. Rest it on the counter and you’re good to go. Maybe less filing so you get more crunch.

I've made this. They were kind of sloppy for my first attempt, but they came out yummy. Sweet chili sauce was perfect for diping. I think I'll do ground pork next time.
