Replying to @Alima Mascarpone Custard Ingredients: 4 egg yolks 1/2 cup sugar 14 oz mascarpone Pinch of salt 1 1/2 tsp vanilla Heavy whipping cream Equipment: Saucepan Heat-proof bowl Whisk Spatula Food thermometer Optional: handheld or stand mixer with whisk attachment 1. Combine egg yolks, sugar, and salt in a heat-proof bowl. 2. Set bowl over saucepan of simmering water, whisking constantly until the mixture reaches a temperature of 165 F. 3. Remove bowl from the heat and let cool for about 10 minutes (I set mine in an ice bowl to cool faster). 4. Add in the mascarpone a few spoonfuls at a time, whisking until smooth between each addition. Set aside. 5. In a separate bowl, whip together the cream and vanilla until stiff peaks form. 6. Fold the whipped cream into the egg mixture with a spatula until combined (the custard should look smooth and glossy). 7. You did it yay!!
