em dashes are a standard and essential part of the English language and are used to emphasize words to make text clearer. E.g. I say "I like a little green cabbage stew for dinner" you might think I like green cabbage stew for dinner, but I say "I like a little-green-cabbage stew for dinner" you may prefer to interpret this, in context, as I prefer a stew consisting of a literal "little green cabbage" for dinner. The emdash is essentially the only thing linking words or adding emphasis to an otherwise ambiguous sentence. It allows writers to mean what they write without having to write additional sentences for audiences to understand what they mean.
